Italian food that’s not pasta or pizza continues and today I’m sharing a perfect everyday meal for when the time or energy is on the lower side.
Pollo in padella’ literally chicken in a pan. I prefer it with a classic tomato sauce but I add black olives and capers for some saltiness and interest. Very typical and traditional for southern Italy. Since we never mix chicken with pasta I would recommend eating it just like it is since it’s a ’secondo’ but if you really want to do a combination plate I would recommend to accompany it with either rice, a salad, bread or beans. A great and healthy meal when you’re eating lean and protein rich foods but still tastes so incredibly good. This chicken recipe is actually the only thing we had with rice in my home when I grew up. It’s easy and quickly prepared and basically everyone loves it.

Pollo in Padella
Ingrediens
- 500g chicken
- 500g tomatoes or 1 tin of chopped tomatoes
- 1 tbs capers
- Black olives of your preference
- 1 tbs oliveoil
- Salt,white wine, basil
How to
- Start by preparing your classic tomato sauce with olive oil, garlic, salt, (wine), and let simmer for 5 min or so.
- add the chicken to the sauce. It doesn’t matter if it’s filet or other parts. They all work well just make sure to adapt the cooking time.
- Cover with a lid. Let simmer about 10-15 min. Make sure it doesn’t dry out. If so you can add a bit of water or white wine.
