This zesty and healthy Italian salad is one of my summer staples. It’s nutrient dense, has lots of fibers which is so good for our gut health, hormonal balance and stable blood sugar. I just love everything about this Italian bean salad. We’ve had it home since I was a kid. You mix it together with just a few minuets. I also love it as a part of a Italian buffet table.

🍋 Zesty Bean- & Lemon salad
⏱ Time: 45 min | 👩🍳 Dificulty: Easy | 🍽 4 portions
Ingrediens
- 3 dl White beans
- 1-2 dl green beans
- 2 lemon (juice + zest, optional)
- lots of fresh parsley, as much as you like
- 3 tbs oliveoil
- Salt & chopped garlic
How to
- Boil the green beans slightly so they still have a bit of chrunch, let them cool a bit.
- Mix oliveoil, lemonjuice, zest and parsley.
- Pour the precooked white beans with the green beans into a bowl.
- Mix all the ingredients and let sit for 5-15 min for the flavours to evolve even more.
- Serve as it is or as a sidedish. I also love this for a buffet table.
